Bun Appetit was born from a mother’s love and an unwavering pursuit of better bread—one that was not just delicious but also kind to the stomach. Joanna, our founder, grew up relishing the simple pleasure of warm, fluffy buns, yet she often struggled with acid reflux, indigestion, and discomfort. When she noticed her own children sharing that same love for bread, she became determined to create a bun they could enjoy freely—one that was as nourishing as it was delightful.
Her journey led her halfway across the world to Asia, where she discovered something extraordinary: a Eurasian sourdough bun crafted through an ancient fermentation process. Unlike commercial breads, which rely on fast-acting yeast and artificial enhancers, this bun was created through a meticulously slow, 7-day fermentation process—a method that not only enhanced flavor but also made the bread incredibly easy to digest.
Joanna was captivated. Over the course of a week, natural wild yeast and beneficial bacteria worked in harmony, slowly breaking down gluten and phytic acid while developing complex, deep flavors. The result? A bun that was light, airy, and slightly tangy, with a texture so delicate it melted in the mouth. It wasn’t just bread—it was a living, breathing product of time and nature. She knew she had found something special.
Determined to bring this extraordinary tradition to Canada, Joanna embarked on a mission to master the science and artistry of fermentation. For two years, she worked alongside expert bakers and food scientists, experimenting with different strains of wild yeast, adjusting hydration levels, and perfecting the 7-day fermentation cycle to create a bun that balanced softness, chew, and gut-friendly goodness. Each batch became a labor of love—from feeding the starter culture to patiently waiting as the dough transformed, layer by layer, into something truly remarkable.

Good things take time, and our founder knew this well. Driven by a passion for excellence, she insisted on a 9-day quest for artisan perfection. Unwavering in her belief that natural yeast, slow fermentation, and stone-oven baking are the heart and soul of a truly exceptional bun, her dedication to this process is fueled by a deep desire to craft wholesome, nourishing buns that bring genuine goodness to everyone.

Day 1 - 7: Natural Yeast Cultivation
The yeast cultivation process begins with the finest raisins, water, and sugar under controlled temperatures.
The carefully nurtured yeast is the cornerstone of our exceptionally flavourful buns.

Day 8: Slow Fermentation
Our naturally cultivated yeast is blended with premium Canadian wheat flour to form the dough.
The dough then undergoes a slow fermentation process for 24 hours.

Day 9: Stone Oven Baked
The dough is baked in a traditional stone oven, ensuring impeccable quality and taste.
